Cucumber Avocado Edamame Salad
Ingredients
Salad
- 2 ½ cups Persian cucumbers, sliced
- 1 ¼ cup edamame, shelled
- 1 ½ medium avocados, or 1 large, diced
- 1 tbsp sesame seeds, plus more for topping
Dressing
- ¼ cup rice wine vinegar
- 1 tsp sesame oil
- 1 tbsp extra virgin olive oil
- ½ tsp flaky salt
- 1 tsp honey
Instructions
- Combine the rice wine vinegar, sesame oil, olive oil, salt and honey, and mix well until emulsified. Set aside.
- In a large bowl, add the sliced cucumbers, shelled edamame, and diced avocado, then pour the dressing over the top. Gently mix until the salad is coated in the dressing. Top with sesame seeds. It is best served immediately to preserve the crunchiness of the cucumbers!
