30-Minute Chicken Chili Verde

- 1 Instant Pot
Ingredients
- 1 package chicken breast tenders, approx. 1 lb
- 1 12 oz jar Trader Joe's salsa verde, or other salsa verde
- ⅓ cup water, swirled around in the empty salsa verde jar
- ¼ cup cilantro, chopped
- 1 jalapeño, finely chopped, with seeds and core removed
- Approx. ¼ tsp black pepper
- Scant ½ tsp salt
Instructions
- Add ¼ of the jar of salsa verde to the bottom of the Instant Pot. Place the chicken breast tenders in the pot, making one even layer across the bottom.
- Season the chicken with the salt and pepper. Pour the remaining salsa over the chicken. Add the chopped cilantro and jalapeño, and gently stir to disperse over the chicken.
- Set the Instant Pot to: "Pressure Cook" and select "Chili," then set the time to 30 minutes.
- After 30 minutes, release the steam and open the Instant Pot. Using two forks, gently shred the chicken and stir.
- For tacos, heat tortillas, add a generous helping of chicken chili verde, and serve topped with queso fresco, cilantro, and avocado. For a lighter option, serve with chopped romaine lettuce, for a delicious salad.
