This recipe is based off of a Kroger recipe that my family and friends LOVE. My version is less sweet, thanks to unsweetened coconut and less sugar, and it is packed with nuts and cinnamon.


Brown Butter Granola
Ingredients
- 2 cups old fashioned oats
- ⅓ cup sliced almonds
- ½ cup pecan pieces
- 1 cup shredded unsweetened coconut
- ¼ cup brown sugar
- 1 tsp cinnamon
- ½ tsp Kosher salt
- 6 tbsp unsalted butter
- ¼ cup maple syrup
- 1 tsp vanilla extract
- 1 egg white, beaten until frothy
- ½ cup dried cherries or other dried fruit, optional
Instructions
- Preheat oven to 325 degrees. Line a rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine oats, nuts, coconut, brown sugar, cinnamon, and salt.
- In a saucepan, melt butter over medium heat, stirring constantly with a wooden spoon, until the butter turns amber brown and smells nutty. Remove from the heat and immediately stir in maple syrup and vanilla.
- Pour butter over oat mixture and mix well. Fold in the beaten egg white to create more clumped granola.
- Spread granola evently onto the baking sheet. Bake for 30 minutes, stirring every 10 minutes.
- Allow the granola to cool completely. It will harden as it cools. Once cool, stir in dried fruit, if desired. Store in an airtight container for up to three weeks.
