Brown Butter Granola

Ingredients

  • 2 cups old fashioned oats
  • cup sliced almonds
  • ½ cup pecan pieces
  • 1 cup shredded unsweetened coconut
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • ½ tsp Kosher salt
  • 6 tbsp unsalted butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 egg white, beaten until frothy
  • ½ cup dried cherries or other dried fruit, optional

Instructions

  • Preheat oven to 325 degrees. Line a rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine oats, nuts, coconut, brown sugar, cinnamon, and salt.
  • In a saucepan, melt butter over medium heat, stirring constantly with a wooden spoon, until the butter turns amber brown and smells nutty. Remove from the heat and immediately stir in maple syrup and vanilla.
  • Pour butter over oat mixture and mix well. Fold in the beaten egg white to create more clumped granola.
  • Spread granola evently onto the baking sheet. Bake for 30 minutes, stirring every 10 minutes.
  • Allow the granola to cool completely. It will harden as it cools. Once cool, stir in dried fruit, if desired. Store in an airtight container for up to three weeks.
