I kid you not, EVERY SINGLE PERSON who has tasted or made this pasta salad is hooked. It is by far the JCC recipe that my friends and family make and request the most.
Jena’s Famous Pasta Salad
This pasta salad is elite. And oh so simple!
Ingredients
- 1 ½ lbs fusilli pasta
- 1 cup dry Italian salami, diced
- 1 ½ cups cherry tomatoes, diced
- ¾ cup fresh basil, torn or chopped
- ¾ cup parsley, chopped
- 1 ½ cups shredded Parmesan cheese
- Half of 1 bottle Newman's Own Family Recipe Italian Dressing
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to boil and add the pasta. Cook the pasta, drain, and allow to cool fully. (Blasphemous tip: If you are in a hurry, for this recipe, you can run cold water over the pasta until it's cool)
- While the pasta is cooking, chop up the salami, tomatoes, basil, and parsley.
- Combine the cooked pasta, salami, tomatoes, basil, parsley, Parmesan cheese, salt, and pepper. Add half of the Italian dressing and mix well.
- Once the pasta salad is fairly well mixed, add the rest of the Italian dressing. Mix well and serve.
- Bonus: This pasta salad is even better after a few hours in the fridge and keeps well for 2-3 days.
