This is a crowd-pleasing appetizer for all of your holiday get-togethers!
Pear & Gorgonzola Flatbread with Spicy Honey & Rosemary
Ingredients
- 2 homemade or store-bought flatbreads
- 2 cups Fontina cheese, finely grated
- 1 cup Gorgonzola cheese, crumbled
- 2 D'Anjou pears, sliced
- 2 sprigs fresh rosemary, finely chopped
- 2 tbsp honey
- 1 tsp red pepper flakes
- 3 cups arugula
- ½ of 1 Meyer lemon, juiced
- olive oil, for dressing the arugula
- flaky salt and cracked pepper, for dressing the arugula
Instructions
- Prepare your flatbread dough according to either package instructions if using store-bought, or according to your preferred flatbread dough recipe. I recommend the Homemade Flatbread Pizza Dough recipe from Sally's Baking Blog. If using homemade fresh dough, I recommend par-baking at 475 for 5 minutes.
- Add the Fontina and gorgonzola cheeses, then top with sliced pears. Bake the pizza for approximately 10 minutes, then broil on high for 1-2 minutes
- Meanwhile, in a medium bowl, squeeze the Meyer lemon juice over the arugula and toss with olive oil, salt and pepper.
- In a small bowl, combine the honey and red pepper flakes.
- Drizzle the spicy honey and sprinkle the chopped rosemary over the freshly baked flatbread. Slice and top with the dressed arugula and enjoy immediately!
