Prepare your flatbread dough according to either package instructions if using store-bought, or according to your preferred flatbread dough recipe. I recommend the Homemade Flatbread Pizza Dough recipe from Sally's Baking Blog. If using homemade fresh dough, I recommend par-baking at 475 for 5 minutes.
Add the Fontina and gorgonzola cheeses, then top with sliced pears. Bake the pizza for approximately 10 minutes, then broil on high for 1-2 minutes
Meanwhile, in a medium bowl, squeeze the Meyer lemon juice over the arugula and toss with olive oil, salt and pepper.
In a small bowl, combine the honey and red pepper flakes.
Drizzle the spicy honey and sprinkle the chopped rosemary over the freshly baked flatbread. Slice and top with the dressed arugula and enjoy immediately!
