Pumpkin Pie Chia Pudding & Overnight Oats
Ingredients
Pumpkin Pie Overnight Oats
- ½ cup old fashioned oats
- ¾ cup almond milk
- 1 tsp honey
- ¼ tsp pumpkin pie spice
Pumpkin Pie Chia Pudding
- ⅔ cup pumpkin, canned
- 1 cup almond milk
- ¼ cup, plus 2 tbsps chia seeds
- 2 tbsp maple syrup
- 1 tsp pumpkin pie spice
- ⅛ tsp salt
Toppings
- ½ cup pecans, chopped
- maple syrup
Instructions
Pumpkin Pie Overnight Oats
- Combine the oats, almond milk, honey, and pumpkin pie spice. Pour the mixture in a container with a lid and pop it into the fridge overnight, or at least for 3-4 hours.
Pumpkin Pie Chia Pudding
- Mix together pumpkin puree, almond milk, chia seeds, maple syrup, pumpkin pie spice, and salt, until thoroughly combined. Pour into a container with a lid and let set in the fridge for at least 3-4 hours.
- Once your oats and chia pudding are both set, in a wide-mouth jar, or a bowl, alternate layering overnight oats and chia pudding. Top with chopped pecans and maple syrup and enjoy!
