Ingredients

Pumpkin Pie Overnight Oats

  • ½ cup old fashioned oats
  • ¾ cup almond milk
  • 1 tsp honey
  • ¼ tsp pumpkin pie spice

Pumpkin Pie Chia Pudding

  • cup pumpkin, canned
  • 1 cup almond milk
  • ¼ cup, plus 2 tbsps chia seeds
  • 2 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • tsp salt

Toppings

  • ½ cup pecans, chopped
  • maple syrup

Instructions

Pumpkin Pie Overnight Oats

  • Combine the oats, almond milk, honey, and pumpkin pie spice. Pour the mixture in a container with a lid and pop it into the fridge overnight, or at least for 3-4 hours.

Pumpkin Pie Chia Pudding

  • Mix together pumpkin puree, almond milk, chia seeds, maple syrup, pumpkin pie spice, and salt, until thoroughly combined. Pour into a container with a lid and let set in the fridge for at least 3-4 hours.
  • Once your oats and chia pudding are both set, in a wide-mouth jar, or a bowl, alternate layering overnight oats and chia pudding. Top with chopped pecans and maple syrup and enjoy!
