Prep the cauliflower head by removing the florets from the stalk and cutting the larger pieces into smaller, bite-size ones.
In a large bowl, toss the raw cauliflower with ¾ cup buffalo sauce, making sure that the sauce coats every piece well.
Set the air fryer to 375 degrees for 20 minutes, checking frequently. Roast for 17-20 minutes, depending on your air fryer and preferred doneness.
Immediately toss the cauliflower in the additional ¼ cup of warmed buffalo sauce. Transfer to a serving bowl and garnish with crumbled blue cheese and green onions, and serve immediately!
