Coconut Rose Chia Pudding

Ingredients

  • ¼ cup, plus 2 tbsp chia seeds
  • 1 ½ cups coconut milk
  • 1 tbsp unsweetened shredded coconut, plus more for topping
  • 1 tsp rose water
  • 1 tbsp honey
  • 1 tbsp maple syrup (optional)

Instructions

  • Combine chia seeds, coconut milk, coconut, rose water, honey, and maple syrup, if using. Whisk the ingredients together until well incorporated. Make sure to break apart any clumps that may have formed.
  • Refrigerate in a sealed container overnight, or for at least 4 hours, until the pudding is fully set.
  • Top with shredded coconut, fruit, nuts, etc. and enjoy!
