Ingredients

  • 2 ½ - 3 cups red seedless grapes
  • 8 oz goat cheese
  • 2 tbsp olive oil
  • ¼ tsp ground cloves
  • 1 ½ tbsp date syrup
  • 2 tbsp cold water
  • Pinch of salt & pepper
  • Crackers, such as Trader Joe's Raisin Rosemary Crisps
  • Fresh fruit, nuts and herbs

Instructions

  • Preheat the oven to 325 degrees.
  • In a large bowl, toss grapes with olive oil, salt, pepper, and cloves. Spray a glass baking dish with cooking spray and spread grapes evenly across the bottom.
  • Bake for about 70 minutes, stirring 4-5 times throughout the process, until the grapes start to wrinkle and caramelize.
  • Remove grapes from the oven and allow them to cool in the roasting dish for about 10 minutes.
  • Meanwhile, put the goat cheese in a medium bowl and press it with the back of a spoon until crumbly. Add cold water in 1/2 tablespoon increments, mixing between each addition, until goat cheese becomes smooth.
  • Using a small whisk or spoon, mix the goat cheese for 1-2 minutes, until light and spreadable.
  • Drizzle grapes with date syrup and mix until all of the grapes are coated.
  • Serve roasted grapes and whipped goat cheese alongside crackers or crostini, fresh fruit, nuts, and mint.
