Preheat the oven to 325 degrees.
In a large bowl, toss grapes with olive oil, salt, pepper, and cloves. Spray a glass baking dish with cooking spray and spread grapes evenly across the bottom.
Bake for about 70 minutes, stirring 4-5 times throughout the process, until the grapes start to wrinkle and caramelize.
Remove grapes from the oven and allow them to cool in the roasting dish for about 10 minutes.
Meanwhile, put the goat cheese in a medium bowl and press it with the back of a spoon until crumbly. Add cold water in 1/2 tablespoon increments, mixing between each addition, until goat cheese becomes smooth.
Using a small whisk or spoon, mix the goat cheese for 1-2 minutes, until light and spreadable.
Drizzle grapes with date syrup and mix until all of the grapes are coated.
Serve roasted grapes and whipped goat cheese alongside crackers or crostini, fresh fruit, nuts, and mint.
