Preheat the oven to 375 degrees.
In a large bowl, add the washed and dried strawberries, with half kept whole and half cut in half. Next, add 2 tablespoons of brown sugar, lemon juice and chia seeds. Mix to combine thoroughly then pour the strawberries into the baking dish.
Give the bowl a quick rinse and dry, then use the same large bowl to mix the crumble topping. Add the butter, 1/2 cup of brown sugar, vanilla, oats, flour and almond flour, using your hands to bring the mixture together. Sprinkle generously on top of the strawberries.
Bake for about 35 minutes until the strawberries are bubbling and the crumble browns slightly. Allow the crumble to cool and set for at least 15 minutes, then serve with vanilla ice cream.
