Vegan Chocolate Avocado Pudding with Smashed Strawberries

Ingredients

  • 2 large avocados ripe, but not overripe
  • 1 cup unsweetened cocoa powder
  • 1/3 cup pure maple syrup or more if you prefer a sweeter pudding
  • 1/4 cup honey or agave
  • 1 tsp vanilla extract
  • 1 orange juiced, avoiding pulp if possible
  • 1/2 tsp Kosher salt
  • 4 strawberries washed, with stems removed
  • 1/4 cup cacao nibs
  • Maldon salt to finish
  • fresh mint to garnish

Instructions

  • Scoop avocado flesh into food processor, then add cocoa powder, maple syrup, honey, vanilla, orange juice, and Kosher salt. Blend until combined, however, it will still be somewhat chunky.
  • With the food processor running, slowly stream 1/2 cup hot water into the pudding, continuing to blend until smooth and creamy.
  • Divide the pudding into two ramekins or small bowls and chill uncovered for 2 hours.
  • While the pudding chills, cut strawberries into quarters and put them into a bowl. Using a fork, smash the strawberries until they are muddled and juicy.
  • Before serving, top with smashed strawberries, cacao nibs, mint, and a sprinkle of Maldon salt.
