Scoop avocado flesh into food processor, then add cocoa powder, maple syrup, honey, vanilla, orange juice, and Kosher salt. Blend until combined, however, it will still be somewhat chunky.
With the food processor running, slowly stream 1/2 cup hot water into the pudding, continuing to blend until smooth and creamy.
Divide the pudding into two ramekins or small bowls and chill uncovered for 2 hours.
While the pudding chills, cut strawberries into quarters and put them into a bowl. Using a fork, smash the strawberries until they are muddled and juicy.
Before serving, top with smashed strawberries, cacao nibs, mint, and a sprinkle of Maldon salt.
