I’m here to let you in on a little secret: Roasted. Grapes. ARE AWESOME. This is without a doubt my favorite appetizer to bring to a gathering or to make for friends.
Roasted Grapes & Whipped Goat Cheese Board
Ingredients
- 2 ½ – 3 cups red seedless grapes
- 8 oz goat cheese
- 2 tbsp olive oil
- ¼ tsp ground cloves
- 1 ½ tbsp date syrup
- 2 tbsp cold water
- Pinch of salt & pepper
- Crackers, such as Trader Joe's Raisin Rosemary Crisps
- Fresh fruit, nuts and herbs
Instructions
- Preheat the oven to 325 degrees.
- In a large bowl, toss grapes with olive oil, salt, pepper, and cloves. Spray a glass baking dish with cooking spray and spread grapes evenly across the bottom.
- Bake for about 70 minutes, stirring 4-5 times throughout the process, until the grapes start to wrinkle and caramelize.
- Remove grapes from the oven and allow them to cool in the roasting dish for about 10 minutes.
- Meanwhile, put the goat cheese in a medium bowl and press it with the back of a spoon until crumbly. Add cold water in 1/2 tablespoon increments, mixing between each addition, until goat cheese becomes smooth.
- Using a small whisk or spoon, mix the goat cheese for 1-2 minutes, until light and spreadable.
- Drizzle grapes with date syrup and mix until all of the grapes are coated.
- Serve roasted grapes and whipped goat cheese alongside crackers or crostini, fresh fruit, nuts, and mint.
