Vegan Chocolate Avocado Pudding with Smashed Strawberries

- Food processor, blender, or Nutribullet
Ingredients
- 2 large avocados ripe, but not overripe
- 1 cup unsweetened cocoa powder
- 1/3 cup pure maple syrup or more if you prefer a sweeter pudding
- 1/4 cup honey or agave
- 1 tsp vanilla extract
- 1 orange juiced, avoiding pulp if possible
- 1/2 tsp Kosher salt
- 4 strawberries washed, with stems removed
- 1/4 cup cacao nibs
- Maldon salt to finish
- fresh mint to garnish
Instructions
- Scoop avocado flesh into food processor, then add cocoa powder, maple syrup, honey, vanilla, orange juice, and Kosher salt. Blend until combined, however, it will still be somewhat chunky.
- With the food processor running, slowly stream 1/2 cup hot water into the pudding, continuing to blend until smooth and creamy.
- Divide the pudding into two ramekins or small bowls and chill uncovered for 2 hours.
- While the pudding chills, cut strawberries into quarters and put them into a bowl. Using a fork, smash the strawberries until they are muddled and juicy.
- Before serving, top with smashed strawberries, cacao nibs, mint, and a sprinkle of Maldon salt.
