- 1 head kale, washed, stems removed, and very finely chopped (about 5-6 cups chopped)
- 2 cups Israeli couscous, cooked and cooled
- ½ cup Kalamata olives, chopped
- ¼ cup sun-dried tomatoes, chopped
- ½ cup marinated artichoke hearts, chopped
- ½ cup walnuts, chopped
- 1 bottle Annie's Homegrown Goddess Dressing, dressing the salad with as much or as little as you prefer
- Maldon salt & fresh pepper
