Pomegranate & Clementine Salad

Ingredients

  • 3 clementines, peeled and sliced
  • 1 cup pomengrante seeds
  • 3-4 mint leaves
  • ΒΌ cup walnuts, chopped
  • 1 tsp lime zest
  • 3 tbsp plain unsweetened yogurt
  • 2 tbsp honey

Instructions

  • In a small bowl, combine and yogurt and honey, stirring until smooth.
  • Arrange the sliced clementine slices on a platter and sprinkle the pomegranate seeds and walnut pieces on top.
  • Drizzle the honey yogurt generously over the fruit. Finish with lime zest and mint leaves. Enjoy immediately!
